I feel like I am missing something here which should be fairly simple. My OS language is English and I have the English UK and English Int with AltGr deadkeys keyboards installed. I'd prefer to not have to move between keyboards to have access to the accent and also I can't work out which keyboard gives me the é. In a perfect world I could use one keyboard layout and shortcut keys to achieve this rather than changing between keyboards. Is there a way to do this?
I was able to configure this for my Mint install without too much trouble so feel like I am missing something simple here...

You should be able to do this by enabling the Compose Key setting. You can use Gnome-tweaks tool to do this easily.
