I use ZorinOS 18 alongside another Linux distribution: GLF OS. But the “problem” is that the icon for this distribution is the default penguin instead of the operating system logo.
Can I change the icon in grub to display the correct one?

You could add an Icon to the Zorin Grub Theme.
To do that, put the Icon with the Name as .png File to /usr/share/grub/themes/zorin/icons/ and then make a sudo update-grub and then reboot and check if it works.

Just tried that but after trying different name for the .png file, I can't figure out how I must name it.
Is there a way to know how the file must be named ?
That depends on the used System Name. When it is really called GLF OS, I would try the following:
- glf.png
- glfos.png
- glf-os.png
You could take all at once if You want. So, take the Icon that You want use and copy it so that You have 3 of it and then name each one.
