Ao alterar um icone de uma pasta e navegar pela barra do sistema até o caminho /usr/share/icons por dentro do mecanismo de busca que o próprio atalho abre os icones deixam de ser exibidos e passa a exibir uma figura constante representando os icones, se voce abrir o Nautilus normalmente e navegar até lá, verá normalmente os icones.

Here, You have to know that Nautilus and the File Picker are 2 different Programs even when they look similar.
What can help, is open Nautilus and going first in the Directory to let the Icon Pictures appear and then change the Icon. That can help to show them in the File Picker. Might not help everytime but should be worth a Try.
