I have a lot of files named ted' s (file name) when searching using files if I put in ted' s I get no file showing. If I put in ted' I get plenty of files. Seems to be something wrong with the search engine..

You can try to disable the Gnome tracker and try a search again, if it work it's easy to disable it completely and enable it also...
try this
systemctl --user stop tracker-miner-fs-3.service
nautilus -q
and launch nautilus and a search

Maybe the Space between ted' and the s is a little Issue.

I noticed that in the O.P., too. I was guessing it may be a typo?
The Filenaming convention is fine; but it may be the Search Tool that is failing, here. If the space is not present in the file name or search, I would suspect that the search tool in Nautilus (Files) is what is ignoring the apostrophe.
