Some may disagree with me but the previous libre writer was way better. It was so easy to use. I didn't have to think about anything that I wanted to do and "figure" out how to use the latest version that comes with mint and zorin. There is nothing more annoying to me than to have to re-learn how to use something that was perfect just the way it was.
I would like to uninstall this latest version, download the old one and install it.

I would prefer a simple copy and paste solution. uninstall versions 26.222 first. followed by an apt get command for libre office writer 6.4 and install. It is really that simple.
If I had it my way, all those who were responsible for and behind the latest edition would be relieved of all and any duties concerning the writer. 6.4 is the most relatable word processor in the world to the comparable to microsoft word . Seriously, just centering a header now take serious hunting and pecking , which buttton do I click on?? Nope, that wasn't it.. On top of that, many of the choices are now more cluttered and so less defined that I think I would rather just find a notepad and use it instead. What were these people thinking?
I appreciate where you are coming from. For me, the Document Foundation created problems when they introduced a version of LibreOffice that had a hybrid 'ribbon' alongside the 'traditional' menu bar.
MSOffice 2007 caused me to be absent with stress as trying to remove an element in a .doc file took me half-an-hour whereas in 2003 it was a couple of minutes.
Ironically I love the ribbon of SoftMaker Office and they offer a much better approach because if you don't like the 'ribbon' you can change the layout to what I would coin the 2003 layout. If purchasing is out of your budget, I can recommend their FreeOffice as an alternative.

It might not be the best Overview but You can choose the 6.4 Version in all offered Sub-Versions.
I must have gotten really lucky because I did download it and I got it to run.
I'm not sure if it will be set to run every time that I want to use it though. As I said, I want to remove the newest version and forget it like a bad dream.
This 6.4 version is the best one I have ever used.
I have to set this version up on my laptop as well, I hope that it goes as easy.

It should. First remove the installed Version with sudo apt purge libreoffice-common and then run sudo apt autoremove (but look first at the List of the removable Files before You delete them). Then it should be gone. And then install the older LibreOffice Version.
