i forgot to mention something all the dark themes has the same issue
Do other aspects of the dark themes remain the same? Just eh text is hard to see?
Can you test:
Open home directory and ensure that all hidden files are showing with ctrl+h
Right click /.config
Rename it to /.config-bkp
Log out and back in. Test themes.
If that works, then it is likely something in a config file, perhaps in /.config/gtk-3.0 or in /.config/gnome-shell...
You can take a look before restoring /.config-bkp and see if that fixes things.
If this does not work, check in /.local/share/gnome-shell and see if there is anything in there. If nothing, check if /.local/share/themes exists and if it contains anything.

Hard to say since we are not sure why the mac theme is doing what it is doing.
You can try
sudo apt install re-install zorin-os-desktop zorin-desktop-themes

thats what its showing me
i did some searching and it says that we should type sudo apt install --reinstall
so i tried it and its working
but there is no change to the theme

I suggest grabbing the package again, then open a terminal within its extracted directory. Then run each:
./install.sh -r
sudo ./tweaks.sh -g -r
./tweaks.sh -f -r
./tweaks.sh -d -r
./tweaks.sh -F -r
./tweaks.sh -s -r
still nothing
I might sound silly but did you try rebooting after those operations?
I remembered when I was tweaking Japanese input system on my Zorin, I needed a hard reboot to apply changes.

I'm stumped. It's not a theme I made or designed... It seems a bit intrusive to me in its installation method that actually changes Settings, rather than keeping everything contained within the gtk and shell theme.
I have no idea what was changed that is causing the desktop to display the wrong settings.
i dont know how or why but its now fixed. I had woken up early so that i could study for my exams and when i just checked the theme it was fixed
Which makes me wonder when you said
you only performed a soft boot, not a complete shutting down and switching on (hard boot).
what is that
Soft boot = pressing reboot switch
Hard boot = complete shut down then restart
oh i had just clicked on reboot from system menu
so it might have been a softboot
