Right now I have an older nvidia gpu, gtx1070, I'll be upgrading to a RTX5060 soon. I was wondering, could I install Zorin for newer gpus even though I have an older card?

Yes, they both belong to the modern nvidia cards.
I have take a Look for the Driver Support for Your GTX1070 Card and You can use the 580 Driver for it, too. So, it should work.
