I went into settings>keyboard and discovered there was no "+" icon or other apparent way to add a new cusotm shortcut. I must be missing something obvious... any pointers? Thanks!
At the settings for keyboard you can add a custom shortcut. Scroll down to the end of the shortcuts and click on "custom shortcuts".
Then scroll all the way to the bottom of the Custom Shortcuts category and you'll find the plus sign for adding a new one.
Like the others already wrote: You have to scroll down. there is the Option to add own Shortcuts. Here a Screenshot to show:
