Can anything "missing" from 'lite' can be installed afterwards?

In terms of networking there's not a whole lot different between the two. The GUI is going to look different, but that's mainly the differences between Gnome (Core) and XFCE (lite). As for adding in what's "missing" from Core to Lite, that entirely depends on what exactly you would want to try to add. The gnome appearance and usage is vastly different at times, and as are the workflows, so adding in some things just aren't going to be possible 1:1. But the functionality is absolutely going to be able to be there on either selection.

It is the networking I am specifically interested in, so that sounds good to me.
If local shares through samba are still possible and RDP through Remmina, that's all I need. ("Nothing flash in our house")

Zorin OS Lite is lighter on resources. It is not less developed. In fact...
Gnome (used for Core) is the more minimalist Desktop Environment. XFCE comes with more out of the box than Gnome does.
But ZorinGroup does add a lot to Gnome using extensions.
Would it help to add thunar-shares-plugin or is it already installed in Zorin lite?

I like thunar, but one thing I noticed was the functionality of the "other locations" box from Nautilus wasn't there. There may be another place for it, but that was something I would miss.
The lite version seems to have most other stuff I am looking for. (commendable to you lot here)

It is there - and it is much simpler.
Just hit the Up Arrow on the toolbar twice to get to root.
Other drives are listed in the left pane automatically, so that you do not need to search through "other locations".

Just a note that in the last week or so, Thunar File Manager has taken a very long time to open, if at all, on my Zorin core 17.3. It was working fine until then. I preferred it some times to Nautilus, specifically in the way you can select which location/devices to show in it's list.
Also the uninstall option in the software manager doesn't seem to do its job anymore. Thunar remains installed.

I think we need more information... How did you install Thunar, how are you removing it - what evidence is there that it is installed?
Is it due to an App menu entry or does it launch?
Is it listed in terminal under apt list installed?
In the Software Store, it will list Thunar-Data package which is the plugin and extension package for Thunar. If removing this, Thunar itself will remain installed.
Thunar may launch slow on Zorin OS Core (Gnome) as thumbnails, etc, rely on Tumblerd or gvfs.
Any changes made to thumbnailer or to the policy can affect launch if this causes a lack of access to either of the above, making Thunar hang in dbus.
This comes down to how you installed XFCE, if you are launching Thunar on Gnome, etc.
For me, thunar in gnome is also very slow, much worse than nautilus, and often does not respond or shows overlapping windows. These problems I don't have in XFCE.
