I have the same issue with the way to small resolution of the install window when I open the .exe.
I change the numbers to emulate to my screen resolution with no effect though.
What to do now?

As far as I understand, (and have personally experienced) Software installation tools for Windows, always appear micro small on Linux. Even the software apps themselves, can appear too small in size as well as, the installers for them.
This is why I only use Linux software, and gave up on Windows software years ago. Reality is, just about any app for Windows, there's a similar or equal app in Linux. And when it comes to games, I only buy and install games through Steam, using Proton to launch said games when required.
Obviously I try to avoid it and find a Linux-solution,
but I would like to think there is a solution for that scaling/resolution issue anyway?!
I would still need and love some help on this issue please!
Can you clarify:
Are you using Fractional Scaling or a HiDPI Monitor?
Generally, what is your default resolution?
You already tried setting a higher DPI percentage using winecfg?

Just to add @Aravisian 's post, have you tried enabling the virtual desktop at same dimensions as your screen?
The untold truth about using Wine is that it almost never “just works” out of the box. Most Windows apps need proper prefix setup, DPI tuning, and sometimes registry or graphics tweaks with overriding DLLs, and doing all that manually through winecfg can get tedious and confusing fast; that’s why it’s much easier to use a GUI app for that, which gives you a cleaner interface to manage Wine versions, configure DPI, isolate prefixes, and apply fixes without digging into low-level settings every time.
I use PlayOnLinux, so I suggest you that. You can install .exe using that (it also let's you manage Wine versions etc. This is an example for an app I use:
