Which "Steam" should I install?

Today I want to play some steam games which I already bought before.

So I go to Software and search "Steam". Then Software shows below three items:

Well, which one should I click to install ?

Your best bet, so you don't have issues, is to open a terminal (app menu, search bar, type terminal), and type:

sudo apt update
sudo apt install steam

You will have to put in your password after the first command (apt update).

Then login to steam and your library will be available.

You may also want to install lutris or wine (sudo apt install windows-app-support).

If you are installing from the Software center, install "Steam - Manage and play games distributed by Steam".

At some point after you have installed Steam, you will probably want to activate Proton (Proton is a Steam component that provides a "translation layer" for Windows games on Linux-installed Steam), but that is done after Steam is installed and your Steam account is active and functioning. At that point, you will be able to activate Proton on a game-by-game basis because Steam Play supports Proton.
