Why did all my YouTube downloading apps stop working and what's a workaround?
Properly Youtube that got new ways to block downloaders.

What Programs do You use? Did You tried Varia?
It happens because YouTube makes changes, which break the downloaders until someone finds a work around. It's the same on Windows and Linux. Check your browser's extensions to see what people are moaning about and which ones are working as expected. You can also try different browsers and their own addons / extensions.

do you have any suggestions for other browsers that are working for you in this case?
video dowloader, parabolic, and yes varia too and that didn't work either
Use a Firefox fork.
Try: YouTube Downloader (UDL Helper) and Easy Youtube Video Downloader Express.
You may have to wait for them to catch up with any new changes though.

i will try those but what seems to be working is using SimpleScreenRecorder for the video and format lab to extract the audio to just get the music.
There have been times when I've wanted to listen to audio, from a podcast or language lesson, so I've used VLC media player to extract the audio from a video and create an MP3.
How? The versions of VLC I've downloaded never had that capability?
Yes they did, you just didn't know it. I've used it for years! You can do it in bulk too.
Open VLC, go to Media → Convert/Save (or Ctrl+R ), then:
- Click + Add and select your MP4 file, then click Convert/Save .
- In the Profile dropdown, choose Audio - MP3 .
- Click Browse under Destination, pick a folder, and name the file - make sure it ends with
.mp3 - Click Start . The blue progress bar at the bottom is the conversion, not playback, don't close VLC until it finishes.
