after the last update my 3rd monitor is not working anymore. Before that it worked like a charm. What can I do to troubleshoot? I tried both USB-C slots of the machine.

Which kernel are you on?
uname -r
Have you tried selecting the earlier kernel at boot from Grub Menu > Advanced Options for Zorin?
Do You use a Nvidia Graphics Card or AMD? Have You other Ports (HDMI, DisplayPort) where You can cnnect it to to check if it runs?
I am on: 6.8.0-100-generic
No, did not try to revert - Will do that tomorrow.
Using the Intel i7-1360P integrated graphics. Monitor works an another PC (Windows).
Maybe it doesn't like the USB-C connection. Have You other free Ports for Monitors?
Hold fire. Aravisian's question probably refers to 6.17 kernel update over 6.14 kernel on Z18 recently that has caused numerous problems.
Are you on Z17, or have you installed 6.8 kernel for a reason?
You could try your previous linux kernel-generic
from grub menu "Additional Options for Zorin"
then choose previous kernel-generic to boot and test.
No other port free at my PC.
I switched back to 6.8.0-94-generic / Upgraded now to Zorin 18 with kernel '6.17.0-14-generic' -> Same behavior
Does Your System run in Wayland or X11? You can checl that with the Terminal Command echo $XDG_SESSION_TYPE
When it should run in Wayland, You could try it with switching to X11/Xorg. to do that, go to the Login Screen. Click there on Your Profile so that the Password Field appears. Then, You should see a Gear Icon in the bottom right Corner. Click on it and choose the Option ''Zorin Desktop on Xorg'' and then log in.
