I just realized that I'm able to open Files (Nautilus) from the guest account and browse to my Admin account via "+ Other Locations/Computer/home/[admin account name]/"
Is this a bug or a 'feature'?

Your can set up the Guest Account to restrict privileges.
Since the guest account is part of your created build, it is included in the Sudoers file.
While this is true on your builds, it is not true should someone try accessing your files remotely.
And I have experienced that happen too, while trying to recover lost files from a different drive.
Without it restricted, having the ability for file recovery is important - a situation I hope you do not find yourself in... but if you do, now you know how.
