I'm not sure if also something of the functionality of the activities feature has been changed from Zorin 17 to 18, but it is nearly the same.
I didn't found the line where the icon is set for the activity button in the css of Zorin gtk theme - there are so many lines.
The icon for the activity overview is saved in Zorin 17 at (enter the Zorin theme you want to use):
/usr/share/themes/ZorinBlue-Light/gnome-shell/assets/activities.svg
You can start a live session of Zorin 17
and copy the icon.

It seems to me that the O.P. is asking not how to change the icon, but how to change it back - as if from a settings layout option.
