Could you please add option to the sound settings for a default audio device in the GUI? This would be a handy feature. I attempt to set the default audio device in the Terminal but I'm not succeeding in doing so. Just thought that might be a great addition to the OS

You can already do that. Go to Settings>Audio. There You can set up Input and Output:
As an Alternative, You could install Pulse Audio Volume Control. It is a Tool for set up Audio Input and Output. you can install it with sudo apt install pavucontrol
