I havent switched to zorin 18 core yet but uppon looking at the screenshots of zorin 18...I can say im not a big fan of the new taskbar.
I think It would be better if the taskbar was simply full width opaque and used zorin gray dark as shell theme by default...As a mussle memory from windows 10 1 year ago, my taskbar was always black/dark and the windows on light theme...
If I was you I would have the theme defaults like this
(the light theme would be zorin blue light, I use purple anyway)

I don't disagree with the disliking of the floating taskbar. Apparently everyone (including KDE and other distros) have started to incorporate this floating design by default. The only positive I have of it is that it's a quick change one I boot into the desktop lol. I think it's supposed to look new / sleeker for some people? Not too sure what the logic in it is, to be honest.
I actually prefer a lighter taskbar with a TINY bit of transparency. So for me, that actually is preferred. I don't know if they could choose either dark or light and make everyone happy. As long as they keep it easily changeable (as it currently is, as far as I can tell) then I think that's the best option.
But definitely I am not a fan of the "floating" taskbar.

Oh I'm not discrediting your ideas at all, just adding my 2 cents. The main reason I bring up the taskbar is just because the VAST majority of distros do exactly as you describe, light windows with dark taskbar. I don't mind when I see something different being done (albeit very minor).
