Tried. Still not working for me.
I installed Kooha and it worked perfectly.
It doesn't appear to be an error of pipewire or gstream
With Kooha I got this error message:

I had an error on the first run.
Try restarting the system.
Well, in an attempt to resolve, the sound stopped working and the option to enter in system settings disappeared from the menu.
I reinstalled Zorin, and Video Capture is working.
I believe they are a problem caused by the update, as it started to occur after accepting the system update.
I did the same (clean reinstallation of Zorin), I did not install any snap or flatpak packages, I just updated the system through the Zorin OS Update Manager (required) and.. . guess what ?! Screenshot (video) still doesn't work!!
So, I conclude that this issue is inherent to the OS itself.
By the way, why we now have that screenshot tool when the previous was better? With the previous one we could take screenshots without freezing the current frame while now to players the current it clearly ruins their gameplays since it freezes the current frame and proposes to choose between full-screen screenshot and windowed screenshot. Also, the video capture button is useless since the screenshot tool doesn't come with a recording tool. Are both things that GNOME thought being helpful and go to user's benefit or what?
The Screenshot Thing comes from Gnome, yes. In Gnome 43 it is built in as far as I understand that. So, You can't simply delete it like other normal installed Programs.
