How do I add a
new text document & libreOffice
to the right-click menu on the desktop .?
I think it's only available in Nautilus (File browser).

It seems like it has been removed. There seems that there may be a way to add it again though through this article:

I use Zorin every day while I'm home, and I could've sworn that it was there by default, but maybe I'm just coocoo.
Could be Zorin 16? Gnome is famous for removing features that people need.

You need to have a folder called Templates inside your home directory. Any file that you create in there will be used as the base for the new ones that you want to create:
You can have for example a spreadsheet following some custom format, ready to be duplicated, etc.
