The issue is resolved now - There are two options in the store for FreeCAD. One is an APT package and the other FlatPAK. I've uninstalled the original (APT) and now installed the FlatPAK option. This took a good deal longer to install and now allows me to select 'Open' from the Software store (I didn't have that option before). Also, the app now appears in the 'Graphics' section of the menu stack.
