Does anyone knows how to increase mouse pointer size like in Linux Mint?
You can increase the Default Mice. Custom cursor themes often cannot be increased.
In Zorin OS Lite, this is done from the Settings > Mouse and Touchpad > theme > Cursor size
Not sure about Gnome / Zorin Core off-hand... I need to head out the door in a minute. You might search the web for "Ubuntu 20.04 increase cursor size"

OP is using CORE
Click 
icon bottom of screen. Click on settings. Scroll down and click on accessibility
