I've installed Microsoft Edge:
Version 140.0.3485.66 (Official build) (64-bit)
On Zorin OS 17.3 Core
Trying to pin a website to task bar:
click on three dots
More Tools
"Pin to taskbar" not shown
The same works fine on Windows 10.
I haven't found any references stating that this is not supported on Linux.
Hope to get some helpful info.

That would be probably because the MS Edge version for Windows is integrated with their own taskbar.
You will see an option to pin sites (that support it) up at the address bar:
This will make it available as an "Edge App" (notice the second entry):

When the Function shouldn't be supported entirely, you could use as an Alternative one of the followinf Program for creating a Web App:
You can find these in the Software Store.
