my question is about installing heroics games launcher. I only use steam and gog
would it be better to use the gog installer through wine/bottles or just heroic game launcher from the software store? im newish to linux tbh.
I want the most compatiblity i can get with my 1080ti. also any extra things i should do/download/install to get better results? Thanks!

As for using WINE/Bottles, any Windows game running in Linux is using WINE or Proton in some capacity (Proton being Valve's offshoot of WINE), even if you're not doing it directly. If you only use Steam and GOG, then I'd stick with Steam and Heroic unless something forces you to do otherwise.
