Nvidia X Server setting is empty after updating the GPU driver to 510

There are several things you can try:
Run

sudo prime-select nvidia

sudo ubuntu-drivers install

Or, check your drivers to ensure all versions match
You can use the X-swat repository or even try the Oibaf repository (but do not use Both at the same time):

sudo add-apt-repository ppa:ubuntu-x-swat/updates

OR

sudo add-apt-repository ppa:oibaf/graphics-drivers

Then, run

sudo apt update && sudo apt upgrade
