How to WIFI connect a multifunction Printer Canon MP495 to a PC running Zorin OS 17.3 core, knowing that Canon does not provide support nor driver anymore for Linux !

I am in a different OS at the moment but it has the same set of drivers present. I have a TS-8151 but the drivers are for TS-8000 series. I respectfully suggest you try and install the MP490 driver:
In terms of setting up your printer, first make sure you have the IP address to hand. Don't use the graphical interface of Settings | Printers to add your printer. Open a terminal (just type 'terminal' without the quotes in Menu search box then press Enter key) and enter:
sudo system-config-printer
Now click on Add printer. Wait for the next window to populate, then under Network choose the AppSocket/HP JetDirect option. In the empty field at the top type the IP address of the printer. Next you will be asked to choose manufacturer in next window, scroll down to Canon, select it, then scroll down to MP490.
When I had a Canon i-865 there was no driver available. I looked at my Canon Ink cartridge box to see which other printers of Canon they were compatible with and spotted BJC-8800. I selected this option in Printers and it then printed! If MP-490 does not work, check your ink cartridge box.

In another thread there was a link to this site. When I try from Germany to open canon website there is shown that for this printer no linux driver is available. I am not sure if the old one here can still be used or will be opened when you click on download.

Is the Printer shown in Settings>Printer?
From previous use of other distros, launching from the terminal is better with the command I posted. The other thing I forgot to mention is to turn off network discovery of printers which I covered in the Unofficial Manual on how to do this.

Although I didn't find all the steps you described, I found a way to install the printer by following these steps:
1 Find the printer's IP address (which was a very laborious step for me)
2 Delete the printer(s) installed during the Zorin installation
3 Open a terminal and enter: sudo system-config-printer
4 In the pop-up window, select "add printer" then "Wifi printer"
5 ignore the printers appearing in the list and choose "new printer"
6 Enter printer's IP address found in step 1
7 Select "Canon MP490" in the steps of selecting a driver
And now the default printer in Zorin Core 17.3 works under the name "Canon-MP 490"
