If possible, I would recommend taking out the other 2 drives in the system, so that when you're installing Zorin the ONLY drive that you could install it to is the drive that you have left in there specifically for Zorin. Then, when installing you could just select it to wipe the whole drive and install, and would make the install process much easier for yourself in that regard as well.
It's not too difficult if you can't remove the other drives, just in this scenario it generally is a bit safer.

I prefer to play it safe, and I will remove the 2 other SSDs.
Now...once done how will I be able to make a dual boot once I will put back the W11 SSD?
I imagine I will need to go to GRUB but will this work if W11 SSD was not physically in the laptop at the time I installed Z18 ?
You can update grub after the fact to include Windows boot options in that same menu. And after everything's done and put back in, you'll just want to make sure Zorin is set first in your boot order over windows. Generally just a
sudo update-grub
should be all you need to do once in Zorin with everything back to being installed.
Beneath @applecheeks37's Way, I would suggest the Following Way:
Start the Zorin Installation and choose the ''Something else'' Option. In the Partitioning Tool, choose Your Drive. Under the Option ''Device for boot loader installation'', choose ''Windows Boot Manager''. Then the Bootstuff will land in the already existing EFI Partition from Windows.
If You shouldn't want that, You have to take ... let's say ... 300mb from the Drive where You want install Zorin and use this as EFI-Partition. Then, take the whole Rest of the free Space and choose the Mount Point / and format it to ext4
