Yes, it is possible to install MATE. You can take a look here:
With removing gnome I'd be careful. I am not sure. If you make a new install it would be better to install Zorin lite and then switch to Mate.
You can install it and remove Gnome. But there would be the Question if it wouldn't be better to go with a Distro that uses MATE as default Desktop.
Here on Zorin, You can install it with the Terminal Command sudo apt install mate-desktop-environment but I would suggest to try that in a VM first or only then when it isn't bad when Your System might be broke.
Since it's possible to have multiple desktop environments installed at once, I'd suggest keeping Gnome around in case something goes wrong.
I am trying to remember from Zorin 15 days, i was able to change to Plasma and Enlightenment.
If you want to try a decent Debian OS, PCLOS Debian offers multiple DE .iso's including one for MATE.
Be aware that you won't be able to access the different layouts that Zorin offers if you decide to remove it.

In Zorin OS, as well as many other Linux distro, you have the flexibility to install any desktop environment of your choice. I know this because I once tried KDE Plasma on my Zorin OS 17 installation (VM).

I'd like to add to that, @saro94. I'd like to mention that while after installing KDE Plasma on my Zorin Installation, though I could switch between DEs, the installation of KDE Plasma has seemed to mess with Zorin DE as well, e.g. the Zorin icons on Zorin DE were replaced with the KDE Plasma icon pack.
So yeah, installing another DE can mess with the customisation of Zorin DE.
