Audacious. Because it let's me organize music my own way. Does no have a library database. A descendant of Windows XMMS player.

Lollypop is well integrated with Gnome and easly find out album cover.
Do You want a simple Music Player only or something with integrated Music Library?
The already named VLC I can name, too. Mights not have the nicest Interface but do what it should. then there would be Clementine. And when You search a simple Player, I can recommend Amberol. It simply plays Music and has a functional, solid Interface.
Thank you all for the suggestions, I'll check these out. And thanks to Ponce D.L. for mentioning Clementine! I knew there was something I'd used 6-8 yrs ago in Mint/Cinnamon but couldn't remember the name. I'll check out Clementine again but I also see there is a new supposedly better spinoff called Strewberry which might deserve a look.
