"encrypted disk" worries me.
Was it encrypted when you had Windows?
Did you use Bitlocker in Windows and disable that before wiping Windows?
Also did you disable Fast Start-Up in Windows before wiping.
Have you also disabled Secure Boot, Fast Boot in BIOS.
