I plan to replace my current nvidia GPU for a AMD GPU.
As I'd like to perform a few benchmarks first is there an easy way to switch the drivers from nvidia to the open source (AMD) drivers? Is simply switch the drivers sufficient?

During your testing, just swapping the GPU (while it's off) is enough. AMD has kernel drivers.
Based on this post, you can even leave in the Nvidia drivers during testing:

You can change to Wayland afterwards if you want, and then uninstall the Nvidia drivers when you're satisfied.
I would go a slightly different Way than @chronosJ suggested. When You want make Benchmarks, I would suggest to do it with Your Nvidia card and installed Drivers. After done, uninstall the Nvidia Drivers and shutdown Your PC and replace the Nvidia Card with the AMD Card. and then turn on the System again.
