How is the trackpad scroll speed not a built in feature in the GUI??
I know it can be done via commands, but in my experience, they do not stick after reboot.
This really should be a basic feature, how was it missed?

You can add the commands to autostart.
I understand your desire for easier access to basic functions. Maybe a distribution with KDE desktop is the better choice for you. The Gnome developers seem to see things differently and remove more and more functions. I can only provide you with a link to instructions for a workaround that works with Wayland.
When you use XOrg and not Wayland (you can switch to it when you logout and at login click on your username, then a cog wheal appears at the bottom right corner, there you can select "Zorin Desktop on Xorg") you can also use xinput commands and add them to autostart for permanent use.
