I've been dealing with this issue for a while but it sometimes scares me. Sometimes during start up my system will already have the software updater open trying to get me to do updates. However since I didn't open it myself I usually close it, restart my laptop and then open up the updater again. Doing so will show me a different list of updates from the ones shown before. Have I been hacked?

No, nothing here shows any sign of any malicious activity.
You do show that you have an added repository that is unsupported on Noble Numbat, however. Screenfetch has been deprecated - while the application still works fine, the repository is useless, now. I recommend removing that.
System Updates and the Upgrader can act a bit funky if you have added conflicting repositories.
We can check for any conflicts if you relay the terminal output of
cat /etc/apt/sources.list
ls /etc/apt/sources.list.d
Also, Mirror Responses on server checks can have different timing. If having trouble, from Software & Updates under "Download From" select Main Server instead of the regional mirror.
Thats normal. I personally, am on Zorin OS 16, and the updater is always screwing up, as often as it works great. I think its more of an average Linux thing, then a Zorin thing. Often a computer restart fixes issues, hence...
Also, sometimes if a new issue gets introduced, that causes updating issues, it gets fixed in a day or so. But yeah, the Gnome updater gets a little twitchy at times.
