What do you all use for essential file backups, not system files?

I've used the built-in backup app and it's OK but I want more control over what to backup, when to backup and where. The built-in backup does allow saving to my home server, something I need to happen, however I can't control when it backs up, specifically what day and what time. The folder selection are options OK but could be better.

I've tried luckyBackup and Back in Time but I can't seem to get them to go to the home server that I'm mounting to a local folder.

What can you all recommend? I'm looking for something graphical if possible, thanks in advance!

My approach is simple, but may not work for those with many flies or need daily backup. I use grsysnc to clone my pictures and documents folders, compress them, and move them to a removable drive. I do this as I feel the need based the number of new files added.

Thank you for the reply! That could be an option too

I use DejaDup (AKA Backups) to backup /Home.
I also drag (copy) the contents of /Home to a folder on USB HDD for good measure, to be independant from DejaDup app.
