I have a 5 monitor set up. 2 HDMI and 3 displaylink usb3 monitors. I spent time yesterday configuring a second workspace to replicate my windows 11 environment that I am migrating from. All worked really well and was very pleased. Booted up this morning and 2nd workspace was empty with all those windows in the first workspace. Also, lost layout of which windows are open on which monitors. I suspect that it is taking time to load the displaylink drivers, but that does not explain the loss of the 2nd workspace. Any help greatly appreciated.
How did you setup the second workspace? Did you use the gnome extension "Auto move windows" in Zorin? Install extension-manager
sudo apt install gnome-shell-extension-manager
and then go to tab installed, there enable auto-move-windows and click on the cogwheel, then on + to create a rule to start a specific app on a defined workspace.
With gnome tweaks > startup applications
sudo apt install gnome-tweaks
add the programs you want to run automatically in the workspace to autostart.
Maybe this gnome extension can help you if you want to restore sessions after reboot, but I haven't tested with multiple monitors.

What graphics card do you have?
Have you tried X11 (Xorg) instead of Wayland(default)? (You can select X11 from cog wheel icon from bottom right on the login screen.
