Moved the clock to the left. Will take getting used to but makes more sense.

Why not a clock on the Desktop instead of the panel. It will free up more space.

But you would loose sight of time if you had a full screen app running.
You may then have to look at your watch or phone 
(Maybe that explains Storms long shifts at the keyboard - lost sense of time)

Exactly. I found having taskbar on top, with the clock right in the middle so much more convenient. So much so I removed conky, for lack of need.

Same here, I once tried to make a nice conky, even when you use someone else's, but never actually looked at it so it just feels like a complete waste of time...

I love conky.
It is great if you have more than one monitor.
But if using only one monitor, I can easily see how it could be rendered useless or superfluous.

Is it possible to have conky appear on top of the status bar on Gnome? I just tried a quick test using negative gap_y but conky disappears under the bar. If I could position it on top so that it always stays visible, then I could have some good use for it.

The only thing that comes immediately to mind is the parameter in the .conky file for own_window_type
You can try
own_window_type='dock'
own_window_type='panel'
Or experiment around a bit with other parameters... I would need to look up a list of all available ones.
That didn't work, I'll see if I can find something but another option (inspired by @Storm screenshots above) is to make the top bar transparent (using Transparent Shell gnome extension).That works, now I just have to come up with something

I won't get any awards from this but it's functional. I had to hack my way around it though: made the top bar transparent using Transparent Shell extension, then quickly edit the wallpaper with gimp to paint the top bar on the same color as it was. After than it's a matter of playing with the coordinates, color and font which I will still have to adjust some other time.

Conky is really useful to me, I used to have nearly exactly the same thing under Windows with the Desktop Widgets. I look at it all the time to determine how the machine's operating. I keep it to the right-hand side of the desktop, and I've set own_window = true and own_window_type = 'panel' in conky.conf, so maximized windows see conky as the edge of the screen... so conky is always visible.
